#28 (Sweet Potato Mash)

Do you love me?....Watch me now, oh....Ah, shake it, shake it baby....I can mash-potato....And I can do the twist!​
Ingredients
     1. 2-3 sweet potatoes
     2. 3 tbs ghee or coconut oil
     3. 1- 1/2 tsp chili power

     4. 1- 1/2 tsp paprika 
     5. 1 tsp garlic granules
     6. 1/2 tsp onion granules
     7. 1/2 tsp salt

Instruction
     1. Remove skin from sweet potatoes using a peeler. Or using a sharp knife cut ends of sweet potatoes off the slice off skin.
     2. Cut sweet potatoes in half. Place then in boiling water for about 15-20 minutes or until you can easily stab the sweet potato with a fork.
          * Note: you want to make sure they are soft all the way to the center
          * Everyone’s stove top is different and depending on how big the pot is and how much water is used the time may vary
     3. Remove fully cooked sweet potatoes from boiling water. Add them in a large mixing bowl
     4. Add in all spices and ghee or coconut oil. No need to pre-melt the ghee or coconut oil; it will melt with the heat from the sweet potatoes.
     5. Mix all ingredients together in a bowl. I prefer to use a mixer but you can also smash/mix with a large spoon. * Note- if you don’t have a mixer and you don’t want to mix by hand you can use a good processor or                 blender.
     6. All sweet potatoes should be fully mashed. Make sure there are no raw chunks. Do a quick taste test to see if you need more ghee/coconut oil or more spices. Then serve warm!
           * Note these have a great savory flavor--> They go with almost anything

#27 (Chocolate Coconut Pudding)

                                                                                                   Need to test your self-control? Try this recipe over the weekend and we dare you not to eat it in ALL one sitting!
Ingredients
     1. 1 can full fat coconut milk2. 2 tbs maple syrup     2. 1 cup chocolate chips (any kind you like)
     3. 
1 cup chocolate chips (any kind you like)

Instructions
     1.  Mix all ingredients together in food processor or blender.
     2. Chill in the refrigerator for 20+ minutes.
     3. Add toppings and ENJOY!

#26 (Tahini Chicken)

Quit it with your boring plain chicken... Aim to spice things up a bit this week for your meal prep. 
Ingredients
  1. 1-2lbs of chicken thighs
  2. 2-3 tbs avocado oil
  3. ¼ cup tahini (plain and unsalted)
  4. ¾ cup water
  5. 2 tbs coconut aminos
  6. 1 clove garlic
  7. 1 tbs maple syrup
  8. 2 tbs arrowroot (optional - to thicken sauce)

Instructions     
     1. Mix Tahini, water, coconut aminos, maple syrup, garlic and arrow root into a bowl ( It will be very thin, that's okay)
     2. Cut chicken thighs into pieces or strips. They cook faster!
     3. Spray the pan with cooking oil then add in the avocado oil and chicken
     4. Cook chicken on medium heat until it is almost cooked through. Then add in the sauce mixture.
     5. As the sauce cooks it will turn into a paste! It’s super cool! Keep on heat until the chicken is completely cooked. Then remove, let cool a bit and enjoy!
​        * Note- goes great with rice or throw on top of a salad!

#25 (Balsamic Avocado Toast w/ Bacon)

Not your average avocado toast! We have added a few surprises so be sure to check out details below.
​

​Ingredients:
1. 1 Large Avocado
2. 1-2 slices of your favorite bread
3. 2-3 bacon strips
4. 1-2 tbs balsamic vinegar
5. 1 roma tomato
6. Broccoli sprouts (optional)
7. Salt and pepper (to taste)

Instructions:
1. Cook bacon any way you like. Here are some ideas:
         i.  Place on a plate w a paper towel underneath and on top. Microwave for 3 minutes. Keep cooking in :30-1minute incriminates until desired crispiness is reached. 
         ii. Place on a baking sheet lined with foil and bake at 450 degrees for 10-15 minutes, or until crispy. Keep an eye on it do it doesn’t burn.
         iii. Cook in a pan until desired crispiness is reached. Be careful of grease splatter!
2. Place slices of bread in the toaster. Toast until crisp, or desired toastiness!
3. While bread and bacon cook, cut avocado in half, remove pit and remove meat from skin. 
4. Place avocado into a small-medium bowl. Using a fork smash avocado into the sides of the bowl, turning it two a chunky paste like texture. Add salt and pepper to taste. 
        i. Pro-tip: add the “Everything but the bagel” seasoning from Trader Joes instead. It will change your day. 
5. Remove toast from toaster. Using a knife spread avocado onto toast. 
6. Slice tomato into bite sized pieces. Add on top of avocado spread. 
7. Drizzle balsamic on top of toast.
8. Once bacon is cooked, crumble it into small pieces and sprinkle it on top of toast.
9. Top off with broccoli sprouts and more salt and pepper if desired. 

NOTES: You can add eggs, or breakfast/chicken sausage to this for extra protein. You can also make this 100% vegan by skipping all meat products and using a vegan bread.
